Trinitario cocoa

Also very rare, this is a crossing of Criollo and Forastero. It has been created on Trinitad Island, after the epidemics have almost totally ruined the Criollo stocks. This cocoa is full of character and is very aromatic. Amongst others, a subspecies is the Sanbirano. It represents no more than 20% of the worldwide production.

Menavava plantation

In the Sambirano Island, to the North of Madagascar, The Menavava plantation cocoa has the stamp of vanilla.

Coating chocolate

This dark coating chocolate bar 70% of cocoa minimum of 750g is made with the Trinitario cocoa of the Menavava plantation of Madagascar Island. It is an ideal ingredient with many uses: moulding, decorations; coating, mousses, ice-creams… All the fields of the confectionery may use this kind of chocolate.
