The house of Besse is recognised for its exceptional foie gras, as well as recipes which use foie gras at their base. To enjoy this foie gras at its best, store the tin in the refrigerator for 24 hours. A couple of hours prior to serving, open the two ends of the tin and press gently to free the foie gras. Cut using a very sharp knife that you have previously plunged into hot water. Serve on a bed of salad. You can also serve the foie gras in thin slices on a bed of sliced pear garnished with redcurrants. A certain success!
