Balsama Bianco 4 Travasi - White Balsama vinegar
« This vinegar is obtained from acetified and fermented white grape must aged in oak casks in order to acquire its golden colour. The most obvious characteristic of this vinegar is that it doesn't modify the colour of the dishes and it offers very fruity and slightly acidic aromas and flavours (it replaces wine vinegar wonderfully). It can be used to season salads, raw or cooked vegetables, sauces, fish, white meat, cheese (mozzarella made with buffalo's milk, Bitto, scamorza and robiola) or it can be added to certain cocktails.
