This balsamic mango-flavoured glaze is at once sweet, tangy, refreshing and exotic, and is made from a mixture of slowly-evaporated wine vinegar, mango and grape juices. Left in barrels for several months in order to develop its tartly sweet, rich mango flavour, it is then treated in order to give it the perfect thick and creamy consistency.
The smooth, tartly sweet flavour of this glaze makes it ideal for use as an ingredient in chutneys, or simply by itself to enhance exotic dishes, chicken stuffed with sweet pepper and beansprouts, or smoked duck. It adds a delicate twist of flavour to plaice dishes and is delicious with rice timbales.
