& Slow Food Presidia (Called “Sentinelle” in French)

The Haute Provence einkorn and the flour made with that cereal have both been protected by a PGI since July 2007. This agreement came to be added to the initiative applied by the international organisation Slow Food, within the framework of Presidia: projects to safeguard groups of artisan producers and save the traditional quality products.

Fascinating flour

This einkorn flour can be used to totally or partially replace the wheat flour, for your bread, pastries, biscuits… It will give your preparations a very pleasant taste and texture.

Pancakes like no others

Take 200g of Haute Provence einkorn flour, 2 eggs, 1 soupspoon of brown sugar, 1 soupspoon of olive oil, 200ml of beer (drink with moderation), 200ml of milk. Blend all ingredients but avoid making lumps, then let it rest 2 or 3 hours before preparing your pancakes. Enjoy!
