Organic chestnut flour
Delicious flour from the Cevennes!
The sweet chestnut flour has the particularity of not containing gluten, contrary to the flours made of cereals. Today this flour is being rediscovered by a great number of bakers, pastry cooks and others cooks for its taste.
Recipe idea - the little "cévenol à la sweet chestnut" (cake) : you need 100g sweet chestnut flour, 100g wheat flour, 80g sugar, 2 teaspoons of vanilla sugar, 2 teaspoons of baking powder, one yoghourt, 3 eggs (separate the yolk from the albumen), 2 spoons of milk, 300g apples and raisins. Mix all the ingredients one after the other, finishing with the battered whites. Pour into a buttered round cake tin. Place the slices of apples and the raisins on top. Bake for about 35 minutes in a hot oven (ca. 200°C). And just enjoy.
