This mustard is made by the Fallot Cie at Beaune in Burgundy, one of the most famous French mustard-maker since 1840.

Seeds are selected for their quality. They are ground with millstones (flint). Millstones avoid damaging the heat-sensitive seeds. This proccess keeps all the flavors of the seeds.
