For this mustard, Fallot chose to add the rosemary, a Mediterranean aromatic plant of calcareous grounds… So, open the jar, you will smell instantly, perfumes of the dry and rocky scrublands and somehow you will hear some cicada songs.
This mustard is made by a Burgundy factory in Beaune, a mustard-maker since 1840. Seeds are selected for their qualities and are ground as in the past with millstones (flint). Millstones avoid damaging the heat-sensitive seeds and keep their flavours.
