In the past, it was a vegetable for survival; because of its energy qualities and its long preservation (It prevented scurvy in sailors), but little by little, the sauerkraut became more copious thanks to the imagination of the farmers from Alsace. Over the years, the sauerkraut has become one of the most famous traditional recipes of Alsace and there are hundreds of versions depending on the villages or the families.

At the end of the 19th century, with the development of transport and the birth of the restaurants, the sauerkraut spread throughout France. It gave up the status of “farmer’s dish” to become gentrified: copious and gastronomic, it has today pride of place on our celebration tables.

The Robert Company, pork butcher for three generations, makes for you this delicious and richly garnished sauerkraut cooked with “La Madelon” beer and seasoned some salt of Guérande.

Composition : Prepared sauerkraut 300 g. Traditionnal pork butchery : pork shin 80 g, smoked bacon 75 g, smoked sausage 60 g. Cooked juice : bier Madelon 30 %, broth, lard. Potatoe 80 g, guerande salt, spicies, aromate.
