The caper is the pickled bud of the caper shrub. This bush is essentially native to the Mediterranean region. The capers are categorized by size, with the smallest sizes being the most delicate and strongest taste. The smallest, the “non-pareil” (diameter 5/7 mm) directly follow by the “surfines” (7/8 mm) and the capucines (8/9 mm). The “non-pareils” are considered as the best ones. Their rather sour taste goes well with mayonnaise, a cold sauce, with salad or a tapenade… The capers also are served with many dishes such as meat, fish, or pastas.
