This jam is made from a maceration of wild pansy (Viola tricolor). The harvest is very delicate and should be done in the morning just after the dissipation of the dew. This flower, also called wild violet, as several medicinal properties. It is used since the Renaissance to cure skin diseases.

Composition : Petals of wild pansy flowers, sugar, lemon juice (acidifier) and fruits pectin. Prepared with 5g of petals for 100g. Total sugar content: 62%.
