This oil, with long finish, a powerful taste and lingering aromas, can be used with sweet and salty dishes. For instance, we can use it for avocado salad, prawn cocktail (with raspberry vinegar, salt, pepper), for minced chicory with grated smoked salmon (pistachio nut oil, balsamic vinegar, chives, salt, pepper), for French bean salad (same as previous dressing). We can also use it with pastas, potatoes, rice based dishes, avocado, beetroot. It goes perfectly well with all salads: chicory, romaine lettuce, lamb’s lettuce, dressed with balsamic vinegar or lemon juice. This oil is excellent with smoked and grilled fish or at the end of a plain fish cooking. With fruits, it goes well with raw apple and pear.

The oil mill from Beaujolais

The oil mill from Beaujolais is born from a fortuitous discovery in 1981 of a traditional oil manufacture workshop of the 19th century. A few years are enough to drive Mireille and Jean-Marc on a real passion and make them world-famous throwsters, and this, thanks to their high quality products is used by many star Chefs (Troisgros, Ducasse, Blanc, the Pourcel brothers, Gagnaire…) A nut, or a fruit, an oil, that is the credo of the oil mill. So, not blended, only first pressing virgin oil, for a preserved taste.
