A strongly flavoured oil with a flavour slightly reminiscent of brassica. The flavours lend themselves very well to potato salad, dishes with beetroot, shallot, broccoli, cabbage, or to make the famous ‘cervelle de canut’ (Speciality of Lyon in France: a mix of whisked fromage frais, minced chives, salt and pepper). Rape seed oil is particularly suited to vegetable dishes, and can be used as the basis of a salad dressing when blended with lemon juice.
