The dominant note in this mix is that of lemonbalm, which adds a delicious lemony scent, and which is an essential ingredient in Thai and Vietnamese cooking, used to flavour soups, curries, sauces and fish dishes. Dried lemonbalm is also very much a part of Malaysian, Indonesian and Chinese cooking, where it is used in marinades. Its flavour is bolstered here by a touch of lime oil. The mix also includes shallot, chilli, coconut and galangal, which has a gingery taste.

Very highly perfumed, this mix is perfect in a salad dressing with sesame oil and lemon juice, or simply sprinkled onto grilled meats, vegetables, rice or any wok-cooked food.

Serving suggestion: Mix together a little of the spice mix with some nut or olive oil, and some lemon juice. Pour over the meat and allow to marinade for an hour in a cool place before cooking.

This spice mix is presented in a glass, cork topped jar, and is as much a feast for the eyes as for the mouth!
