This mix is made with star anise, which has a light aniseed flavour ; parsley ; lemon zest and essential oil ; pink peppercorns which provide a strong flavour of pepper, juniper and aniseed ; fennel and green aniseed. Use in all your fish dishes.

Serving suggestion: Use one to two teaspoons of the spice mix in the body of the fish, and another couple of teaspoons sprinkled on top. Add a touch of olive oil, a little salt, and put into the oven. Use the same recipe for grilled fish, but allow the fish to marinade in the spice mix for an hour before cooking. For poached or fried fish, mix two teaspoons of spice with some olive oil and lemon juice (or white wine) to add to your sauce. Easy and delicious!
