Léonard Parli confectionery is one of the oldest one in Aix-en-Provence. Founded in 1874, it is famous for its calissons. Calisson is a white diamond-shaped sweet. People from Aix-en-Provence used to say in the XVIIth century that calissons prevent from plague what was a good reason to eat calissons. Nowadays, there is no longer plague outbreaks and people from Aix-en-Provence have found some other good reasons to eat calissons...

Tasting tip : ideal for dessert or little snacks during the day.

Composition : Ground almonds, preserved melon, outer skin of orange, sugar, unleavened bread, whites of eggs beaten stiff.
