Round rice is more crumbly and contains more starch than other rice. It is commonly used in Asia.

Cooking tips : round rice is very absorbant, and will soak up water or milk. While cooking, it releases starch that will glue the grains one to another. It is thus ideal to cook soups or rice pudding. In Italy, it is used to prepare risotto.
