Albacore tuna is fished off the Basque coast near to Saint Jean de Luz. The ventrèche is the stomach of the fish, extremely rich in omega 3 oils, which have proven health benefits. It is also the part of the fish that boasts the best flavour. This is a simple recipe, best served with fresh bread and a tomato salad dressed with a little balsamic vinegar.
