Granny Smith apples, with their firm texture and slightly sour taste are great for cooking and munching. This recipe really makes the most of all their flavour by poaching them gently in a caramel syrup.

Did you know ? The tarte tatin was created by Caroline and Stephanie Tatin, two sisters from the South of France, in their restaurant. One day, one of them prepared a traditional apple pie, but forgot the pastry. Realizing her mistake, she placed the pastry on top of the apples when half-cooked, before turning over the whole thing and obtaining the now worldwide famous tarte tatin!
