A family recipe of the Azaïs-Polito company
This rockfish soup has a special role in the history of the Azaïs-Polito company: it was the very first recipe launched by Georges Azaïs and Raymond Polito in 1963.
A truly authentic recipe, its ingredients vary slightly at different times of the year according to what the fishermen catch.
This soup has won many culinary awards, including several prestigious Hérault Gourmand prizes.
Serving suggestion: Enjoy with croutons, grated cheese and the famous rouille sétoise (a famous sauce with oil, eggs, garlic, saffron, lemon, pimento and salt).
