Raymond Polito from Sete has always a new recipe to taste. He is widely known for its fish recipes and now, he also proposes a nice set of sauces with aioli, rouille and even a mayonnaise. And this mayonnaise made with new laid eggs and other natural ingredients is just great !

Tasting : serve this mayonnaise with your fishes, meats, shell-fishes or simply on bread with a smoked salmon slice.
