Hog fish is common in the Mediterranean sea, where it particularly likes the rocky sea bed of the area. In cooking, it is often used to prepare rockfish soups or a bouillabaisse. Raymond Polito decided to launch a new hog fish recipe, and the result is this delicious hog fish paté. Use it as a spread on toasted bread, and serve topped with a black olive.
