A delicious dish, prepared with care by the Danos brothers in the Dordogne.

Serving suggestion: Keep chilled in the fridge for 24 hours before serving. Remove from the fridge 15 minutes before serving, then serve the quail on slices of toasted bread, accompanied either by a chilled sweet white wine or a full bodied red wine.
