This spice mix comes from the West Indies. It is made with different spices such as Indian saffron, red hot peppers, coriander, mustard seeds, garlic.

Meat or fish colombo recipe : in a saucepan, simmer 2 finely sliced onions, add 2 stoned tomatoes cut in pieces and then add some pinches of colombo. Mix and let simmer for 15 minutes. Add the fish or meat still crude and let again simmer for 15 minutes.

Composition : garlic, red pepper, Indian saffron, coriander, mustard.
