Lemon grass is a traditional ingredient of Indian, Thai, Vietnamese, Indonesian, Malaysian, Chinese food…. It gives a lemony touch to the dishes. You can use it your marinades (meat or fish) and you take it off at the end of cooking. Lemon grass can be used to flavour green mint tea, like in Morocco and it goes very well with ginger, coconut, garlic, shallot and hot pepper.
